This brouilleur (mixer in French) is a way of adding water and sugar to your absinthe. Pour cold water into the opening and watch the water begin to slowly drip through a small hole located at the bottom of the dripper. Each droplet falls onto the lever which creates a see-saw motion dispensing the water onto the sugar cube and into the glass of absinthe.
